Long before “green” and “farm-to-table” became buzzwords, there was Nora Pouillon. When the Austrian-born chef arrived in 1965, she was shocked by the American diet of processed food. Her response? Open Restaurant Nora in a Dupont Circle town house, develop a network of eco-friendly farmers and eventually earn designation as America’s first certified organic restaurant.
