Cicada Artisan Chocolate

Good chocolate is a beautiful thing: beans sourced for a fair price from sustainable plantations and as little as possible done to the produce between it leaving the plant and landing on your lips. You could try a square or more from Cicada, a bean-to-bar, responsible, sustainable small maker. On Fridays they are at The Rocks Foodies Market, on weekends at The Rocks Markets and on Saturdays at Bondi Farmers Market.

There are few things more mesmerising than watching a skilful confectioner lump about a great heap of molten sugar and turn it into something beautiful. The thought of eating it probably helps with the mesmerising-ness of the scene too.
