After the success of high-end yet affordable omakase concept Sushi by Bou, owners Hank Freid and Brandon Freid launch a new sushi spot at The Sanctuary Hotel: Sushi Lab. Sushi Lab replaced the hotel’s concierge desk, bringing a similar, intimate dining experience to the hotel as Sushi by Bou. With just about enough room for eight guests, reservations are a must. The menu traditional sushi with a twist as well as other Japanese delights. Highlights include toro tartare with avocado and nori crackers, smoky miso soup with konbu tofu purée, and a must-try macaron with uni.
