Rubira's @ Swallows
Rubira's is the operation of well-known fishmonger and restaurateur John Rubira. The opening of a seafood restaurant seemed like a logical next step, considering Rubira spent his mornings at the fish markets with first pick of the seafood. Instead of one market fish of the day, diners can expect a choice between six to 10 options. These specials sit alongside mainstays such as the signature chilli tiger prawns and oven-roasted scampi.
Less a seafood restaurant, more a seafood emporium, The Atlantic—nestled waterside within the Crown Entertainment Complex—contains a trifecta of dining options. The most sophisticated of the three is the Dining Room, led by executive chef Nick Mahlook, who handpicks a selection of sustainable and wild seafood every morning. There is also an Oyster Bar & Grill and a more casual Fish & Chippery.
A "sea to plate" ethos is at the heart of Waterfront Southgate, a seafood bar and grill located right on the banks of the Yarra River. The chefs make a point of sourcing seafood direct from the city's best producers and make daily trips to the markets to ensure that what is served is as fresh as you can get without eating it straight from the sea. The best way to enjoy the menu is with the signature lunch, available Monday to Friday.
