Enjoy the summer season with fun flavors and tantalizing tastes with these fun seasonal menu specials in Las Vegas.

The heat may be stifling, but that doesn’t stop diners from enjoying some alfresco dining. In addition to fantastic people-watching and outdoor patios, many Las Vegas restaurants have incredible dining specials throughout the warmest months. Summer Food & Beverage Specials

A favorite amongst Las Vegas locals, Carson Kitchen has a fun variety of summer menu items. “Summer is my favorite menu of the year. It allows me access to wonderfully bright and vibrant flavors and is the perfect time of year for spice and flavor without being heavy-handed,” said Chef and Owner Cory Harwell. “We continue to celebrate our menu philosophy of reimagining dishes our guests are already familiar with or introducing new ingredients by putting them in familiar vehicles, such as the grilled oysters, hot dog burnt ends, chip butty, shirt rib, and cold carbonara.” Menu specials include crawfish tacos, a watermelon & feta salad, BLT flatbread and more.

Al Solito Posto has brought back “Pastaholics” just in time for summer. The special is available for bar top seating every night from 9 p.m. to close. All pasta options are available for 50% off with the purchase of a beverage. Pasta selections include Cacio e Pepe, lobster ravioli, corn agnolotti and more. 

In collaboration with Vegas Test Kitchen, the new Greene Street Test Kitchen inside The Palms has a fun pop-up concept with delicious flavors. Mamasan by Crystina Nguyen-Fresh and Saucy American Polynesian Chinese Cuisine is open 22-23 and 29-30. “This one-of-a-kind culinary pop-up experience and collaboration will introduce amazing dining options for our guests here at Palms,” Palms Casino Resort General Manager Cynthia Kiser Murphey said in a press statement. “The three featured chefs have deep roots and a strong following here in Las Vegas and are ready to impress with diverse menus, bold flavors and unique techniques, set in the dynamic Greene Street Kitchen space.” Set menus include a welcome cocktail and are priced at $59 per person. 

Water Grill inside Forum Shops at Caesars offers a delicious variety of seasonal seafood options. The restaurant invited us in for a hosted dinner to check out the summer specials, including wild Copper River salmon and wild Maryland soft-shell crab. The salmon comes with heirloom carrots and vadouvan curry butter, and a crispy, savory skin. The soft-shell crabs are served with a watermelon and cucumber salad and a brown butter soy-ginger sauce. The chilled dish had the perfect combo of flavor and texture and was perfect for a refreshing summer dish. Both dishes are available throughout summer while supplies last. If you miss out on the specials, don’t worry. Water Grill has one of the most extensive selections of shellfish (raw and cooked) and seafood items in town. Whether it’s a light summer seafood special or a heartier fish dish, Water Grill has a flavor and texture for every palate.

Bouchon inside The Venetian Resort Las Vegas has a special through September 21 that’s perfect for rosé fans. Guests who order from a selection of rosé bottles can enjoy complimentary hors d’oeuvres to accompany their bottle. Guests must order from the following selections- 2021 Tardieu-Laurent, Tavel Rosé, Côtes-du-Rhône, 2020 Château d’Esclans,“Rock Angel,” Rosé, Côtes de Provence, 2020 Daou, Rosé, Paso Robles or 2021 Caraccioli, Private Property, Santa Lucia Highlands.

Grimaldi’s Pizzeria has some delicious summer specials, including the “Barbecue Chicken Pizza,” blueberry cheesecake, strawberry cheesecake and a “Strawberry Lemonade Smash.” Just in time for summer, “The Bridge Board” debuts as a year-round menu staple with a variety of charcuterie. If you’re feeling fancy, try “The Bridge Board Bundle,” which includes a bottle of wine and is priced at $30. 

Beauty & Essex inside The Cosmopolitan of Las Vegas has six new menu specials for summer. Guests can peruse the pawn shop outside before entering the speakeasy-style space and enjoying new items like the Peruvian salmon ceviche, brown butter scallops and yellowtail agua chile. We got a sneak peek at the new menu specials at a media tasting and loved all of the fresh flavors that are perfect for summer.

Jaleo, also located inside The Cosmopolitan of Las Vegas, brings back “Summer of Sangria” from July 4-31. Summer is the perfect time to enjoy a delicious sangria, and guests can enjoy several variations of the libation in-house and to-go. Sangria options are sold by the glass (priced at $14), half-pitcher (priced at $38) and full-pitcher (priced at $60 except for the Sangría Roja de Lujo, which is priced at $70). The Jaleo culinary team also has a presentation of three tapas to enjoy with the fruity cocktails. 

“Pine Dining” Chef Dinner Series at the Mt. Charleston Lodge brings life to the property that was devastated by a fire in 2021. The dinner series is scheduled to feature numerous pop-ups from some of the best chefs in Las Vegas, including Nicole Brisson, James Trees and Colin Fukunaga. The dinners will be held in a temporary structure, and Saturdays feature “Summer Chef Cookouts” while Sundays feature “Sunday Chef’s Table Dinners.” Proceeds from the dinners will be donated to local charities. Please note- no private vehicles will be allowed to park at Mt. Charleston Lodge, and all ticketholders must also purchase a shuttle option. 

“After almost ten months since the Mt Charleston Lodge fire, our family looks forward to reuniting with friends from near and far on the mountain this summer,” says Ellis Island General Manager Christina Ellis. “Pine Dining will launch a new chapter for the Lodge, creating a special experience to celebrate great food and beautiful views at a site cherished by so many members of our community and beyond!”

STK Steakhouse inside The Cosmopolitan of Las Vegas celebrated summer with a hosted media event featuring happy hour specials, the restaurant’s new “Whip Shots,” and a returning dessert. Visitors can enjoy “Cocktail Hour” Monday through Thursday from 4 p.m. to 6 p.m. with a delicious variety of food and beverage items. The returning dessert, “The Cloud,” features strawberries, Swiss meringue, cheesecake mousse and vanilla ice cream under a cloud of cotton candy and a Belvedere Vodka flambé. The “Whip Shots” are made with Cardi B! Whip Shots—a vodka-infused whipped cream with a perfect summer flavor.
