Delicious Plant-Based Cuisine in Las Vegas
Long gone are the days of plain vegetables as the only plant-based options. In Las Vegas, there are numerous meatless choices in a variety of cuisines and flavors. Here are some of the best vegan and vegetarian options in town.
China Poblano at The Cosmopolitan of Las Vegas offers a Vegetable Tasting Menu alongside its traditional tasting menu, especially for plant-based eaters. We visited for a hosted media dinner and sampled several of the vegetable tasting menu items in addition to the main menu. Our favorite? The "Young Coconut Ceviche," which had the perfect blend of savory, sweet and tangy flavors and a completely unique texture (the tasting comes in small spoons and we enjoyed it so much, we would happily have eaten two full bowls).
The Edible Bunch
Get a taste of gourmet plant-based personal cuisine with the Sunday brunch presented by The Edible Bunch at StarBase. “Plant-Based Sundays” is a limited collaboration taking place monthly from January to April with events on January 16, February 20, March 20 and April 24 from 10 a.m. to 2 p.m. The unique event space will have numerous food stations with a wide range of vegan and vegetarian options like made-to-order chickpea steaks, cauliflower nuggets, butternut squash mac-n-cheese and other delectable plant-based goodies. “We are thrilled to be partnering with The Edible Bunch to kick off the new year and Veganuary with our plant-based brunch series,” Tricia Costello, co-founder of StarBase, said in a recent statement to the press. “Sustainability is important to us in every aspect of our business, and this series is an approachable and fun way for the entire community to get involved.”
