Five Ways to Celebrate Spring in Las Vegas

Spring in Las Vegas means fun restaurants specials and plenty of outdoor activities. 

Spring in Las Vegas is relatively short—it’s usually sandwiched between a strange winter and a searing hot summer. Locals love to enjoy the brief period of gorgeous weather whenever possible, and we frequently celebrate with some pretty fun offerings and activities. Here are some of our favorites!

Spring at the Terrace

Green Valley Ranch Resort has brought back its popular terrace pop-ups with a spring installation aptly titled “Spring at the Terrace.” We attended a hosted media tasting to get a look at the temporary installation. Located near the pool and spa, “Spring at the Terrace” brings lovely floral backdrops, private “greenhouse” seating and Instagrammable cocktails and bites to the resort’s patio.

The garden-themed space provides a perfect setting for some alfresco dining as the temperatures begin to heat up once again. Botanical Cocktails include the “Down to Earth,” “Mariposa,” “Victorian Garden,” “Spring Fling,” and “Petal to the Metal” in lovely floral potted servings. The pop-up also has a selection of rosé flights and several shareable food options that include tuna tartare, a “Garden Party” dip platter, assorted Madeleines and a lovely dessert platter.

Poolside Fitness Classes

Every Friday through September 23, fitness enthusiasts can enjoy select classes at the Boulevard Pool at The Cosmopolitan of Las Vegas. The first and third Friday of each month will feature Poolside Mat HIIT, while the second and fourth Friday of each month features Yin Yoga. Guests can enjoy the stunning Strip view each morning at 7 a.m. with their class for only $25 per person (this includes a mat, towel and water). Anyone can register for the classes online here

Seasonal Cocktails at Esther’s Kitchen

The favorite local restaurant Esther’s Kitchen, has a whole line-up of fun cocktails, especially for the spring season. Try one (or a few) of ten different original cocktails at this Arts District spot. Enjoy the “Gran Torino” (with bergamot and chamomile flavors), “Rose Colored Glasses” )with rosemary and rose petal egg white foam), “Top O’ The Mornin” (with Pimm’s), “Lucha Tigre” (with guanabana and green chile), “Cool Runnings” (with banana and coconut). “Now Lettuce Pray” (with elderflower”), “Don’t Sexton Drive” (with tangerine and yuzu), “Sierra Sur” (with framboise and Campari), “Devil’s in the Details” (with smoked rhubarb) and the “Caminante” (with bourbon and bitters).

Spring Menu at Kona Grill

If you’re in the mood for exotic flavors, make a visit to Kona Grill inside Boca Park. Seasonal flavors include the “Wagyu Filet Surf and Turf,” the “Fire Dragon Roll,” and the salmon Crudo. The restaurant also has several seasonal signature cocktails for spring, like the “Kona Kosmopolitan.”

Dive In Movies

Enjoy the outdoor temperatures every Monday at 8 p.m. (doors at 7 p.m.) with Dive In Movies at The Cosmopolitan of Las Vegas. From May 9-September 12, the poolside movie nights are set to feature movie-themed cocktails, a fun outdoor experience (with a range of classics like “The Breakfast Club” to action-packed blockbusters like “Black Widow” and family-friendly films like “Encanto) and a stunning view of the Las Vegas Strip. Movies will be shown on the 65-foot digital marquee, and tickets can be booked here
