138°, a new chophouse from award-winning chef Matthew Meyer, is open in Henderson. The restaurant takes over the former space of Served Global Dining (Meyer’s previous restaurant) and features a particular dry-aging program in-house, providing Greater Las Vegas with a local neighborhood craft chophouse. The restaurant also features a full cocktail lounge that’s perfect for the end of the workday or the start of a fantastic evening out.

138° isn’t your average steakhouse. “I spent several weeks over the summer reaching out and visiting ranches all over the West trying to find family-owned businesses with responsible practices that were producing uniquely delicious meat,” Meyer explained. “It was a lot of work, but we’re excited with what we have to offer. We’re also dry aging fish, duck and other proteins unlike anyone else in the city, and we have the amazing Adam Carroll producing some of the most creative fun cocktails you’ve ever seen.”

If you’re in the mood for unique flavors, you’ll find them at 138°. “I love to play with flavors from all kinds of culinary traditions, so after honing down the steak program, we looked to bring unique twists to classics like salmon, duck, burgers, grits,” Meyer said of the menu. “We like to go all the way to outer space and then bring it back down to earth.”
“We have a one-of-a-kind dry aging program that is built around exclusive relationships from family ranchers, including Anderson Ranches, Corvus Farm, Kai Gourmet, and Nevada’s very own Perigo Hay & Cattle. Our dry-aging program goes beyond steak, featuring dry-aged king salmon and duck. There is nothing like this in all of Las Vegas.”
