The American at Crown Center

Chef Debbie Gold, who trained at Michelin-starred restaurants in France, worked at Charlie Trotter’s in Chicago and won the 1999 “Best Chef: Midwest” award from the James Beard Foundation, lavishes her extraordinary experience and skill on the oft-changing menu at The American Restaurant, Crown Center’s bastion of haute cuisine, which remains one of Kansas City’s must-do dining destinations. In pursuit of culinary perfection, Chef Gold turns to local producers like Thane Palmberg Farm, Prairie Birthday Farm and Green Dirt Farm to turn out dishes like sautéed halibut with baby squash, Marlboro potatoes and sweet onion; poached bone marrow with salted potatoes, sorrel, and admittedly non-local Australian truffles; roasted lamb with nettle risotto, baby beets and garlic chives. For dessert: smoked strawberry pie with sheep’s milk crème brûlée, micro angel food and scorched gelato.
