801 Chop House

One might not expect a chain restaurant to revel in small-farm products, but 801 Chop House (of which there are in any case only four) invests its handsome, hyper-masculine Power & Light District location with a passion for locally sourced ingredients to accompany its line of USDA Prime steaks and fresh seafood. Local morel mushrooms go into the compound butter that sits atop of the 8-ounce filet mignon; Bates County Farms in Rich Hill, Mo., grows the sweet corn in the succotash that adorns the Irish organic salmon as well as the corn used in the lavish house salad, a cornucopic mound of mixed artisan greens, tomato, Maytag Bleu Cheese, poached egg and braised pork belly; the blueberry trifle dessert features local blueberries and heavy cream from Shatto Milk Company.
